Can you all see my ginormous smile? I promise you it is from ear to ear. I will admit it to anyone, anytime, anywhere… I LOVE the POTATO best of all!! Yes indeedy, looooovvve it!

Potatoes are my comfort food. They have been ever since my granny introduced me to potato soup as a child and I haven’t looked back.Β  Now add creamy ricotta, savory pancetta and I start to see beatific cherubs hovering over my stove.Β  Weird I know.Β  Here is my recipe for Pancetta Potatoes Au Gratin, I hope that this dish comforts you as much as it does me. Here is what you will need…

Pancetta Potatoes Au Gratin


2 lbs potatoes

2 cups heavy cream

2 cups ricotta cheese

1 stick butter

6 oz pancetta

2 cloves of garlic

3 new onions

6 tbsp bread crumbs

1 tsp olive oil

1/4 tsp Italian herb mix

garlic chives for garnish

salt & pepper to taste

Preheat the oven to 375

In a small sauce pan melt 1/2 stick of butter with 2 cups heavy cream on medium heat. Heavy cream makes me smile like a cat πŸ™‚

Add two cups ricotta cheese to the cream and butter. Stir until completely melted. Say Cheese! πŸ™‚

Add 1/4 tsp herbs. Set aside.

Dice the pancetta, 2 garlic cloves and 3 new onions into small pieces.

In aΒ  skillet on medium heat with 1 tsp olive oil saute the meat, garlic & onions until the pancetta is crispy. Bacon is meat candy! Especially Italian bacon.

In a bowl mix the pancetta and 6 tbsp bread crumbs. Set aside.

Peel and wash the potatoes. Then slice them into thin circles. Mandolins work best for this.

Salt and pepper to taste.

In a 2 quart baking dish that has been coated with cooking spray, begin layering the potatoes evenly along the bottom. Make the layer about two rows deep.

Pour 1/3 of the creamy cheese sauce over the potatoes. Oh my word, I could lick the pot.

Keep repeating the layering process until you have covered the potatoes with all of the creamy cheese sauce.

Sprinkle the pancetta bread crumb mixture across the top. Cover with foil and bake at 375 for approx. an hour and a half. Uncover for the last few minutes to get that perfect golden brown color. * Note- You can use more breadcrumbs if you need to fill in some gaps*

Ya-hum-mi! Dice some garlic chives into tiny pieces for a garnish. Include the flower if you have some fresh, the flower is edible as well as beautiful.

Right about now is when the computer should have a feature so that you get just a taste. Maybe one that will let you lick the screen, it would be messy but it would beat licking an envelope any ole’ day. Nah! Why do that when you can…
